Blueberry Bowl & Blueberry Chia Muffins
Currently on a blueberry smoothie kick for breakfast. Instead of constantly drinking my smoothie through a straw I keep coming up with new ways to drink it. Check out my blueberry smoothie bowl + @toneitup blueberry-chia mini muffins here!
Blueberry Smoothie Bowl:
1/2 cup frozen blueberries
1/2 cup frozen cauliflower
1 cup coconut milk (or non-dairy milk of choice)
1 scoop TIU vanilla protein
1 scoop Vital Proteins Collagen
2 tbsp cashew butter
2 tbsp flax seed
Cinnamon
Top with your favorite toppings! ... I topped mine with bee pollen, coconut flakes, cashew butter and a @toneitup blueberry-chia mini muffin (recipe below!)
Tone It Up Blueberry-Chia Mini Muffins
3/4 cup vanilla Tone It Up Protein
3/4 cup of almond flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 Tbsp chia seeds
2 Tbsp coconut oil, melted
2 Tbsp maple syrup
1 egg
1 tsp vanilla extract
1/2 cup unsweetened almond milk or coconut milk (from a carton)
1/2 cup frozen blueberries
Coconut oil spray
Preheat oven to 350
Combine all ingredients & whisk together
Fold in blueberries
Spray muffin tin and add 2 tbsp of batter to each
Place in the oven for 20-25 minutes
Remove when toothpick comes out clean
Eat + Enjoy!
