MEAL PREP

Okay I love meal prepping things that both me and my baby can eat so I’m not making a million different meals or getting the kitchen dirty over and over again. Additionally, anything that can create more than one meal at a time is a win for me!

These are similar to copycat Starbucks egg white bites and are super customizable to how you like yours! The French toast is one of my favorites to have on hand as well, I like to make mine gluten free but you can make yours with whatever your go to bread is.

For the egg white bites :

Preheat oven to 350 degrees and lightly oil a muffin tin

— 8 egg whites (save the egg yolks in a separate bowl for the French toast)

— 1/3 cup of cottage cheese

— Salt and pepper to taste

— 1/2 a diced tomato

— Handful of chopped spinach

— OPTIONAL sprinkle of cheese

Whisk everything together (or you can just whisk eggs and cottage cheese together and add the tomato and spinach on top once everything is in the muffin tins!)

Place in the over for about 25 min — you want them to just be crisping with a little light brown color on top



For the French toast:

While the egg white bites are cooking, take your bowl of egg yolks (make sure the bowl is wide enough to lay a piece of bread in)

— add about a teaspoon of vanilla

— heavy sprinkle of cinnamon

— 1 tbsp of almond milk (or more depending how much you want to make! you can keep adding milk to get more liquid to use)

— Whisk everything together

Soak your bread of choice in the liquid for a few seconds on each side, you want to try and get the middle wet as well.

Heat up a pan or griddle with butter and once it is hot, add your bread so it sizzles. Cook for a few minutes on each side, checking to make sure it browns but doesn’t burn. I also like to add a good amount of cinnamon to the wet side that is still face up for extra flavor.

Flip, cook on the other side.



Plate everything and eat now or save for later!
