Almond Butter Collagen Cookies + Cookie Smoothie

Looking for a quick and easy recipe for pre or post workout fuel? These cookies paired with this smoothie are your two new best friends.

@Toneitup nails it again by creating a super simple cookie recipe that seriously only takes 5 minute to make plus this smoothie that fills you up without feeling bloated or sluggish. 

I made some modifications to fit the cookies & smoothie to match my necessities. Bananas don't make me feel great so I swapped them out for steamed then frozen cauliflower. Plus, I added Mizuba Matcha to the smoothie for a little caffeine energy. I also added Collagen protein powder to the cookies to add an extra beauty & gut boost.

Cookie Ingredients 

  • 1/2tsp vanilla extract

  • 1/4 cup of egg whites

  • 3/4cup unsweetened almond butter

  • 2scoops vanilla Tone It Up Protein

  • 1/4tsp salt

  • scoop Vital Proteins Collagen

  • coconut oil spray

Smoothie Ingredients

  • 1 cups unsweetened almond milk

  • 1 tsp Mizuba Matcha

  • 1 scoop vanilla Tone It Up Protein

  • 1/2 frozen banana, sliced (or 1/2 cup frozen cauliflower)

  • 2 tsp ground flax seeds

  • 1/4 tsp ground cinnamon

STEP 1: Prep the cookies in advance for the week- preheat the oven to 350. Mix all ingredients into a mixing bowl. Measure 1 Tbsp of cookie dough onto a baking sheet sprayed with coconut oil. Bake for 10 minutes.

STEP 2: Combine all of the smoothie ingredients in a blender and blend until well combined. Top with 1 almond butter cookie.

STEP 3: *You can make a yummy coconut whip to add on top as a frosting for a dessert treat!
